Antipasto: Mixed Antipasti Dish (serves 6 people)
Ingredients:

½ lb. prosciutto, thinly sliced
2 tomatoes
1 jar hot or mild cherry peppers in vinegar
1 lb. Crotonese or other semi-soft table cheese
container of fresh mozzarella balls (ciliegine – “cherry sized”

1 lb. Provolone cheese
olive oil
½ lb. imported mixed olives


Arrange on a salad plate:
Place a slice of tomato in the center of plate. Arrange 3 mozzarella balls on top on the tomato Sprinkle with olive oil

Along the outside of the plate arrange the following:
2 slices of prosciutto
3 cubes of Crotonese or other table cheese
5-6 olives
1 stuffed cherry pepper (see below

 


Stuffed Cherry Peppers:
Remove cherry peppers from jar. Remove stem and seeds from the pepper – you may need to cut off the top of the pepper. Cut a cube of provolone cheese – size needs to fit into the opening of the pepper. Roll the cubed provolone around a half slice of prosciutto. Fill the pepper with the provolone and prosciutto. Sprinkle extra virgin olive oil on top.
