Fritelle alle Mele
Ingredients:

3 golden delicious apples, thinly sliced
4 tablespoons butter
½ cup Cognac
2 whole eggs, 2 egg yolks
1 tablespoon sugar

1 teaspoon baking powder
1 ¾ cup flour
Olive oil for frying
Confectioners’ sugar for sprinkling


Prepare the dough:
• In a large skillet over medium heat, melt butter.
• Cook apples in the butter until really soft.
• Once fully cooked, mash the apples and place them in a mixing bowl to cool down.
• Once apples are cool, add eggs, cognac and sugar and mix well.
• Slowly add the flour and baking powder until the batter is soft and somewhat sticky.

Deep fry the Frittelle:
• In a deep pot heat olive oil until it is very hot.
• Carefully drop spoonfuls of batter into the oil.
• The dough will float to the top and become puffy.
• Remove the frittelle with a slotted spoon once they are golden brown and crispy.
• Place them on a paper towel to remove the excess oil.

To Serve:
• place them on a serving plate and sprinkle with confectioners’ sugar.
