Vesta Italian Villas

Primo: Perciatelli all’Amatriciana (serves 6 people)
Ingredients:

½ lb. pancetta
¼ cup chopped onion
1 tablespoon olive oil
1 ½ lbs. Perciatelli pasta
8 fresh tomatoes, peeled and chopped

red hot pepper flakes
¼ cup dry white wine for cooking
1 cup Pecorina cheese
parsley


Sauce:
• Cut the pancetta into little cubes.
• Place the olive oil, pancetta, onion and hot pepper flakes in a frying pan over medium heat for about 5-10 minutes.
• Add white wine and let it evaporate.
• Add tomatoes and cook for about 10 minutes.

Pasta:
• Cook pasta according to directions.
• Drain and place in large pasta bowl.
• Add sauce.
• Add Pecorino cheese and top with parsley.
