Primo: Spaghetti alla Carbonara
Ingredients: (for 4 people)

1 pack of thick spaghetti
2 eggs
6 tablespoons of grated Parmesan (or 3 of Parmesan and 3 of Pecorino Romano)
7 oz diced pancetta (or roasted pork or prosciutto)

1 crushed garlic clove
5 tablespoons extra virgin olive oil
salt
black freshly ground pepper


Sauce:
• cut pancetta into little cubes.
• place olive oil, crushed garlic clove and pancetta in a large frying pan
   over medium heat for about 4 minutes. Set aside.
• combine the eggs with the grated cheese, a little salt and
   freshly ground black pepper. Set aside.
• cook spaghetti, according to package directions
• drain the spaghetti and place them in the frying pan, over medium-high heat
• pour the egg mixture on top of the spaghetti and sauté, stirring the pasta until
   the egg mixture has become similar to scrambled eggs consistency

Serve right away!
